Paul White has been a Chicago fixture since second grade, which is when he apparently decided this city was non-negotiable. A man of refined industrial taste, Paul spent the better part of his career as Lead Manager of Imported Sausage and Foreign Cheese at the legendary Moo & Oink — a role he'll tell you about whether you ask or not.

After a career handling the city's finest cured meats and aged European fromage, Paul made the completely logical pivot to casino liquidation. "One day you're grading Gouda," he says, "next day you're grading felt on a craps table. Same eye for quality." We'll take his word for it.

When not touring closed casinos for distressed inventory, Paul can be found listening to Noname, loudly defending the Chicago Bears to anyone in earshot, and arguing that Dock 4 is the best dock on Industrial Parkway. (It's the only dock on Industrial Parkway, Paul.)
